Addicted to Yams

We have a new favorite food at the Barnes' house....yams.  Yummmm.  I have come to love yams during holiday meals.  But as of this year, I have began preparing them a special way for us...and they are so tasty!

I slice them up into little chip-sized pieces, drizzle them a little bit with coconut oil (which is one of the only healthy oils that maintains its health benefits when heated), and sprinkle a little salt over them.  Then I broil them for about ten minutes.  With ketchup they are like sweet potato fries! 

Since white potatoes are one of the many foods on Caleb's list of foods he cannot eat, this has been a wonderful alternative.  Plus, they (and sweet potatoes) have a great anti-inflammatory effect!  Its a win-win if you ask me!

Yam chips are great with roast and salad!

Or yams are great with salmon and rice!
