I could not be more thrilled that Spring is here...for many reason...one being fresh produce! What's even better is the farmer's market is just blocks away from my work. So, I will easily be a frequent shopper this year.
Well, today I got some fabulous organic strawberries (strawberries are one of the main foods that you should get organic...they are incredibly porous and will soak up all the icky pesticides) and tried out a new treat. Strawberries with balsamic vinegar, quite a bit of pepper, and a little organic sugar. I am so pleased with the end product! Next time, I MAY use a little oil with the vinegar next time so that it isn't quite so strong (either that or not use as much vinegar). But I was trying to cut back on the fat so left it out this time. Safflower oil would work nicely with the flavor...or any other light tasting oil. And it tasted better after a half hour chilled in the fridge so that the flavors blended. Yummmmm.... :)
