What did we have for dinner tonight at the Barnes'? Coconut crusted chicken nuggets. And it was, oh, so good! For the last month, we have been adding one food in a day to Caleb's diet, as we try to figure out if he is intolerant to anything. And today's food that we added: Coconut. Yummm!
All I did was cut 3/4 lb chicken breast into small pieces. On the side, I mixed unsweetened coconut (about 3/4 cup-ish) and sea salt (1/2 Tbsp-ish) and black pepper (1/2 Tbsp-ish). After tossing the chicken pieces into the coconut mixture (making sure it was coated liberally), I baked it at 350 degrees for like 40 minutes (the coconut was browning on the top). It was so great...Caleb loved it, even saying it was better than non-healthy chicken nuggets! I think it would be good with some garlic salt instead of regular, but we haven't added that into his diet yet.
This one will definitely be made at our house again....as long as Caleb has no side effects from coconut! :)
