It has been quite a refreshing three days off work this Memorial Day weekend. We are just loving not feeling the pressures we have felt all year. In one word, we are thankful.
On Saturday, Caleb woke up at 4am to go turkey hunting with Jonah. He had a blast being out in nature with his buddy. All week he had been practicing his turkey call, haha, but unfortunately the guys didn't see anything out on their wilderness adventure this time. But they sure had fun dressing themselves up in camo! lol!
When he was out and about, I found this picture of him, taken almost ten years ago. He and his dad would go out and shoot their own turkey at the ranch (where he grew up) on Thanksgiving morning.
Another SUPER exciting thing is that this weekend marked 3 months since Caleb has been discharged from the hospital. Considering the fact that he was unable to even stand at that time, we were so thrilled when we were able to go for a 2 &1/2 mile walk this weekend! And it wasn't too slow either. Caleb has come so far in a short amount of time. It makes us think that all this work to get him better is beyond worth it. God has really been with us, healing my husband, and we could not be more thankful!!! This means that Caleb should be ready to travel and go to my sister's wedding in Iowa soon!!!
On a side note, I have been wanting to incorporate ginger into our menu for Caleb, considering how anti-inflammatory it is. And I found a recipe online that I thought would be great! So I made our own homemade Sugar Free Ginger Ale! It is actually pretty good.
So, as long as Caleb doesn't react to the ginger (that was our food we added today), we will keep this on our summer menu! We also may try to add our fresh mint that we have been growing next time. Yummm.... And its all healthy and beneficial and yummy!
This weekend has been a good weekend. We are blessed. And we are, oh, so thankful! :)
